Pick of the week: Ice Cream Sandwich Cookie Mix, Molds and Recipe

With summer around the corner (it’s already here for us in Southern California) it’s time to think about warm weather… You know vacations, swimming pools, and of course treats.

This week’s pick may sound simple but simple can be genius too. For a few dollars at your local specialty kitchen store (or online at Sur La Table) you can get a this Wilton baking tray and a suitable mix to make your very own ice cream sandwiches. Like vanilla cookies with chocolate ice cream? Ok. Chocolate cookies with mint? Sure thing. Strawberry on shortbread? That works too.

And of course the mold gives your cookies the signature look so no one confuses them for a simple cookie and scoop.

Attention Grads: It’s your last chance to cash in on being a kid. Make the most of it.

April…  For 20-some years that’s meant a few months of freedom is coming..

But if this is your last year in school – and I’m sure I’m not the first one to remind you of this — it’s not just another break, it’s that perpetual “next chapter” that you always wanted but now aren’t so sure of.

In just a few short weeks you’ll walk down some aisle, get handed what’s usually actually a blank piece of paper and assuming you didn’t forget to take any of those last finals, be done with school forever, or at least for now. Thing is when you’re done it’s not just school that ends, it’s like one day you’re supposed to all professional and independent.

But thankfully all is not yet lost. You’ve still got a couple months to cash in and play that student card one more time for whatever you want, need, wish you had.

See your parents, your aunts & uncles, best friend, everyone knows that you’re about to be stuck in the same 9-5 they’re in and they all know one more day of freedom is worth whatever it takes. So play it up…

You can be logical and go for help with the first apartment – it’s ok to get real furniture, new clothes — since you can’t wear rainbows to the interview (but if you can, take the job and never look back) or stretch out your freedom with a trip to Europe or some tropical island, after all who wants to start a job in June. Whatever it is you want, now’s the time to ask.

Believe me; you’ll have the whole rest of your life to be working.

Pick of the Week: How about an Amtrak USA Rail Pass?

My pick for this week comes from spending too much time on planes and too little time seeing what’s between the cities. The United States is a big country but we tend to skip right over the amazing scenery, sights and local experiences. Driving is always an option but filling up every 6 hours isn’t exactly what I had in mind…

As it turns out Amtrak offers nation-wide rail passes for 15/30/45 days of travel… You still need to book tickets but you’re free to travel around within your segment and day package from point to point. So basically if you bought the 30 day pass (12 segments) you could start in SF, head up to Portland, trek east for some Chicago deep dish, then make your way to New York for the skyscrapers, down to DC for a dose of political history, and then through the mid-west back home. And you’d still have 6 stops to make along the way.

It’s a lot of time on the road but if you want to slow things, have a student looking for a fun summer experience or are just a big fan of trains, it’s certainly a unique experience and one that would make for a great blog of it’s own.
